...I've never selected a durian. And they say it's part of the gastrocnemius and is a lean, flavorful cut located at the end of the round, just above the shank. Packed with collagen and connective tissue, it requires low and slow cooking but yields incredibly tender, rich results perfectly suited for braises, stews, and slow cookers!
