It was built in 652 during the Tang dynasty and originally had five stories. The structure was rebuilt in 704 during the reign of Empress Wu Zetian, and its exterior brick facade was renovated during the Ming dynasty. One of the pagoda's many functions was to hold sutras and figurines of the Buddha that were brought to China from India by the Buddhist translator and traveler Xuanzang.

SILHOUETTE

This is the best I can do for this week's word. When we were in China we went to the Elephant Trunk Hill in Guilin. This man made silhouettes for us, but I can't find a photo of them, I know they got decluttered when we downsized.

As a bonus, I think this photo taken at the Elephant Trunk Hill looks like a reverse silhouette!

My Recipe Box - Peanut Noodles

March 2021 - Toronto ON

XIAN CHINA

I'm always looking for alternatives to potatoes and rice. I love egg noodles but they aren't gluten free. We've been using rice or vermicelli noodles in pho soup for some time. We also used them in the virtual cooking class we took we took last month. They were in the spring rolls.

I came across this recipe in Toronto Life from the restaurant Uncle Mikey's which he calls Starving Artist Noodles; it’s still on the takeout menu, even as Uncle Mikey’s has pivoted to become a bottle shop

Note: Gochugaru can be found at PATGalleria and H-Mart, but any crushed and dried chili peppers can be substituted.

I used gochujang.

Gochujang  or red chili paste is a savory, sweet, and spicy fermented condiment, popular in Korean cooking. It is made from chili powder, glutinous rice, meju (fermented soybean) powder, and salt.

Ingredients

Makes three full or five snack portions:
400g fresh egg noodles I use gluten free rice noodles
3 tbsp canola oil
1 tbsp ginger, finely minced
1 scallion stalk, finely chopped
1 tsp coarse gochugaru chili pepper I used gochujang
1/2 cup smooth peanut butter
3 tbsp soy sauce
1 tbsp hoisin sauce
1 tbsp sugar or stevia
1 tbsp sesame seeds, toasted
2 tbsp sesame oil
1/4 cup water
malt vinegar (optional) rice vinegar as malt vinegar is not GF
sriracha (optional)

Technique

1. In a small saucepan, heat the canola oil until smoking hot.

2. In a heatproof bowl, pour the hot oil over the ginger and scallions to bring out the aroma. Return saucepan to heat and set bowl aside.

3. Add sesame seeds to the saucepan and stir every few seconds until aromatic and lightly browned.

4. Transfer seeds to the bowl with the ginger and scallions. Add the rest of the sauce ingredients. Stir until smooth.

5. Meanwhile, cook the noodles per package instructions and drain, reserving about 1/4 cup of cooking water. Rice noodle method

6. Return noodles to the pot. Add sauce until the consistency is similar to alfredo pasta, adding some cooking water if necessary.

7. Garnish with more scallions and sesame seeds, and finish with a splash of malt vinegar and sriracha, if desired.

JEROME Grand Hotel AZ

Overlooking the Verde Valley, the hotel is one of the highest buildings in the area. Five stories tall, the building is made out of concrete.
Originally built as the United Verde Hospital in the late 1920s, stories of supposed spirits lingering around the property were reported early on.
Back in this era the town's main attraction was its copper mining business, which would eventually come to a close in 1950. For years the town would wither away, only to come alive again in the 1970s.

It's June so let's feature some weddings!

May 2009 - Hong Kong China

In Hong Kong, couples can only be legally registered as married at one of the government registry offices, or by going to one of the few large churches authorized for this purpose.

The couple must apply well in advance to have the ceremony performed at the registry office on the date and time they wish. So there are no late brides here, or they miss their turn!

Some people in Hong Kong, however, may want to be married on a "lucky day," but find they are too late to get their marriage registered on that day.

So they choose to have a customary Chinese wedding, and then, in the meantime, live together before having their marriage registered.
These are various weddings I captured.

Once the mother had seen me taking photos they kindly posed for me.
