For dessert, and I can't believe I didn't take a photo, was lemon mousse. This was a big hit, John and I ate so much of the mixture as we made it. So lemony, so easy!
Sunday was a lazy day for us after cleaning up. I roasted a leg of lamb with mushy peas and roasted potatoes for dinner with more lemon mousse for dessert.
Monday was a partial holiday and we treated it as such. I made a lamb curry from some of the leftovers with rice and naan/foccacia.
Potato cheddar broccoli cauliflower soup was made from Saturday's leftovers.
Using a box of chicken stock I added an onion, carrot and celery along with the leftover au gratin potatoes, broccoli and cauliflower. Simmered and then blended together. It was good and felt good using up those items.
Tuesday was our day to see Kasama's Infinity Mirrors. I wrote a detailed post here.
We started with lunch in the members' lounge. I had the cheese plate and John had the tuna nicoise which had seared tuna.

Wednesday my BFF and I had plans to go shopping but she was given two free tickets to see An American in Paris.
It was a cold very windy day as we walked to lunch at the Corned Beef House.

We enjoyed but were glad we hadn't bought the tickets, we both felt some of the dance scenes were too long.
For dinner John made his delicious hamburgers.
Thursday I planned to spend the day cooking and baking using all the extra items leftover from Easter weekend.
So other than a quick run to Longo's for some gluten free flour and a couple of other things I spent the day in the kitchen.
For lunch I made broccoli fritters which were great with some tzatziki, also languishing in the fridge. Definitely a keeper.
I couldn't find the recipe I had made a few weeks ago so tried this cream cheese apple coffee cake. It's not a keeper, first of all it takes too long as there are three layers, and I thought the struesel was too thick and sweet even though I always reduce the amount of sugar in a recipe.
Lamb soup was made with some homemade vegetable stock I had frozen and the lamb bone along with cumin, cinnamon, coriander, garlic and onions. Simmered for a few hours and then strained and I added potatoes, carrots, onions and turnip along with the reserved meat. I didn't add barley as it isn't gluten free.
In keeping with using leftovers I made a crustless quiche using leftover ham and broccoli and John made a Caesar salad.
Friday it's snowing out so we changed our plans and stayed in. The Masters is on so John is quite happy.

We went for wings with family and had a great time. Wings, beer, sweet potatoes fries and WOW wedges what could be better?

ReplyDeleteI agree that the lemon mousse looks good and really easy! I love lamb; we have it often. If that's the "skinny" corned beef sandwich, I can't even image the "fat" version!

ReplyDeleteHow funny that we both wrote about "doing lunch" without knowing!! And also: I asked my daughter what meat she was using for Easter, because I don't like ham! Fortunately, she had tri-tip steak.
Even stronger. Today we talked with someone we thought he was from Southern Californian, but today started talking about his brother in Toronto - upon which asked how his brother got there, and he replied that he and his whole family comes from Toronto and he's a dual citizen!

I am forever cutting recipes down for just the two of us. Sometimes it works out, sometimes not so much like when I bake bread. That corned beef sandwich looks great. One year a friend of ours brought a friend of his to our cabin on a summer airplane vacation. His friend was the manager of a The Hat restaurant in Los Angeles. He brought all the fixings to make corned beef sandwiches on rolls. They were so good.When we visit Los Angeles we try to get to one of the restaurant in the chain. - Margy
