My Recipe Box - Chili



We've made chili for years, each of us trying various mixes of ingredients.

Our secret ingredient the last few years has been cinnamon. Friends of ours swear by coffee.

Yesterday I was browsing various recipes and came up with this winning combination. The key ingredient was the dark beer.

For the meat you can use any combination you'd like or have on hand.

We served it with pretzel rolls that we made for the first time.

Ingredients

1 tablespoon vegetable oil
2 pounds Andouille, or other spicy, smoked link sausage, cut into 1/2-inch pieces OR ground beef, pork, veal, turkey, chicken
Salt
Black pepper
2 cups chopped yellow onions
Green peppers
Several chopped garlic cloves
2 tablespoons chili powder
Cinnamon
Paprika
Cayenne
Oregano
2 teaspoons ground cumin
3 tablespoons tomato paste
1 (12-ounce) bottle dark beer - optional
1 (28-ounce) can whole tomatoes, crushed, and their juices OR any tomato sauce that you like AND tomato sauce preferably POMI
2 cans red kidney beans, drained and rinsed

1 cup grated cheddar cheese, garnish OPTIONAL
1 cup finely chopped green onions, garnish OPTIONAL


Directions

In a large heavy pot, heat the oil over medium-high heat. Add the meat, salt and pepper and brown on all sides, about 5 minutes. Add the onions, garlic, spices and cook, stirring often, until soft, about 4 minutes.
Add the tomato paste and continue to stir.

Deglaze the pan with the beer and cook until the foam subsides, about 1 minute.

Add the tomatoes and kidney beans to the pot. Stir well and bring to a boil. Lower the heat to medium-low and simmer, uncovered, for 30 minutes, stirring occasionally to prevent the chili from sticking to the bottom of the pot.

On September 17 we attended a Season 7 episode 2 taping of the Steven and Chris show at CBC. My GF and I had attended before and we thought the guys would enjoy it. 
You have to arrive by 10:15 and then you wait around until they take attendance and get everyone into their seats, around 11 AM. There must be a method to how they seat the audience for the cameras as we were singled out for strategic seating as we had two guys with us and there were only four in total!!

The taping took much longer than the last time as there were new sets to work with. The show aired on September 24.

During the Food portion the chef Michael P Clive made a chilli cornbread cobbler.

2011 - Week 6 Eating

Last Sunday DH made these cinnamon buns from a package. He did an exact job of icing them.


Since it was Super Bowl we had to have chili which DH made with me as the sous-chef (which menat I did all the chopping, organizing and cleaning up)! Normally we have people over but this year it was just us, but we ended up with a huge pot which I took to work and the "girls" and had lunch for Monday and Tuesday.


Don't think I took a picture of the finished product.


I also made the butternut squash soup that I wrote about in a previous post. Very disappointing, tasted bitter.

For a salad I made a version of this root vegetable salad using what we had, cabbage, celery, carrots, cucumber. I was good and nice to have a hearty salad in winter.

Monday - leftover chili.

Tuesday - plain spaghetti and sauce.

Wednesday - chips (French fries) and egg and beans. Can never go wrong with that.


Thursday - DH was playing squash and I had a desire for onion soup. I did cheat and used a boxed broth rather than defrost a homemade one. But it was so good.



Friday - We had steak, baked potatoes and broccoli.


Saturday - we had friends over for brunch and did a big "English" breakfast and spent the day chatting.
