My Recipe Box - Ham Salad Sandwich

When we lived in Montreal in the late 70s and worked at the Bank of Montreal Place Bonaventure, we could walk to their BMO head office on Rue Ste. Jacques for lunch.

Lunch would cost about 75¢  (I have a vague memory of 40¢ at some point).

.One of my favourite sandwiches was their chopped ham. I've thought of that sandwich often over the years and finally decided to try making it. I think this recipe finally got it right. 

Another sandwich that stands out in my mind, although I never tried it, was their peanut butter and bacon!

That was before 1985. In 1985 the federal government brought in taxable benefits which meant the bank had to charge more for meals among a lot of other things as it was considered a taxable benefit.

INGREDIENTS - 6 SERVINGS  adjust to your requirements


1 pound cooked ham diced
¾ cup mayonnaise
1 cup celery diced
3 tablespoons sweet relish
2 teaspoons Dijon
black pepper to taste

optional add ins
Red onion
Hard boiled egg
½ cup dill pickles chopped
1 green onion finely sliced
2 tablespoons dill pickle juice

instructions
Place diced ham in a food processor and pulse a few times to chop. You want it fairly fine but not a paste.
Remove ham and then quickly chop celery/onion/pickles (if using) in food processor.
Place in a bowl and add remaining ingredients until creamy and smooth.
Make ham salad sandwiches!

Store your ham salad in an airtight container in the refrigerator for up to 5 days.
Freezing. Keep it frozen for up to 2 months in an airtight container. It’s best to freeze it immediately after mixing.
