Friday Finds - Recipes

In an effort to cut out buying prepared packages I am going to make pastry from scratch. It is silly and a waste of time when it appears so easy.

My Recipe Box - Quiche


QUICHE

I have made this recipe for years. It forms it's own crust. I now make it gluten-free.



2 cups fillings of your choice (example broccoli, mushrooms, ham, spinach etc.)
1 cup cheese shredded. I've used cheddar and/or mozzarella 
1/4 cup onion chopped
2 cups milk. You can substitute heavy (35%) cream for some/all the milk
1 cup biscuit baking mix (Bisquick) OR Gluten free homemade 
OR GF flour + 1 teaspoon baking powder
4 large eggs
1/4 teaspoon salt
1/8 teaspoon black pepper


Quiche Recipe Instructions

Heat oven to 400 degrees. Grease 10 inch pie plate or 8 inch square. Sprinkle fillings, onions and cheese in plate. Beat remaining ingredients until smooth and pour into plate. Bake 35 to 40 minutes or until a knife inserted halfway between edge and center comes out clean. Let stand 5 minutes before serving.

Delicious with homemade bread and salad!

impossible Cheeseburger Pie



Impossible Cheeseburger Pie made with Bisquick was always a hit when the kids were small. Then when my niece and nephew came along it became a hit with them as well.
As you can see from their website you can add anything you wish to one of these pies.

1 lb lean (at least 80%) ground beef


1 large onion, chopped (1 cup)

1/2 teaspoon salt

1 cup shredded Cheddar cheese (4 oz)

1/2 cup Original Bisquick® mix

1 cup milk

2 eggs





1.Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.

2.In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.

3.In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.

4.Bake about 25 minutes or until knife inserted in center comes out clean.

Makes 6 servings

My Recipe Box - Red Lobster Cheese Biscuits


One of the best things at Red Lobster are the cheese biscuits. These are so easy to make.


These are so good I'm going to have to triple my batches and keep some frozen. Served this week with ham and cauliflower cheese.


Ingredients:


•2 cups buttermilk baking mix, Bisquick

•2/3 cup milk

•1/2 cup shredded sharp Cheddar cheese

•1/4 cup butter, melted

•1/4 tsp garlic powder

Preparation:

In mixing bowl, mix together baking mix, milk and cheese until a soft dough forms, then beat vigorously 30 seconds. Drop from spoon onto ungreased baking sheet and bake at 450° until golden brown, 9 to 10 minutes. Mix together butter and garlic powder. Brush over hot biscuits and serve hot. Makes 10 - 12.
