My Recipe Box - Red Lobster Cheddar Cheese Biscuits


I have been searching for a gluten free recipe to replace my Bisquick biscuit recipe.
Finally this one does it from Gluten Free on a Shoestring.


INGREDIENTS


2 cups (280 g) all purpose gluten free flour from the Bulk Barn

1 teaspoon xanthan gum (omit if your blend already contains it) didn't use

1/4 cup (36 g) cornstarch (or try arrowroot)

1 tablespoon baking powder

1/2 teaspoon kosher salt

1 teaspoon garlic powder

6 ounces sharp yellow cheddar cheese, grated

2 tablespoons chopped fresh flat-leaf parsley didn't use

8 tablespoons (112 g) unsalted butter, cold and shredded

1 cup (8 fluid ounces) buttermilk, at room temperature made my own adding a couple of drops of apple cider vinegar to half and half

2 tablespoons (28 g) unsalted butter, melted
DIRECTIONS


Preheat your oven to 375°F. Line a rimmed baking sheet with unbleached parchment paper and set it aside.


In a large bowl, place the flour, xanthan gum, cornstarch, baking powder, salt and 1/2 teaspoon garlic powder, and whisk to combine well. Add the grated cheese, shredded butter, and 1 tablespoon of chopped parsley, and toss to coat. Create a well in the center of the dry ingredients and add the buttermilk. Mix gently, just until the dough begins to come together. Divide the dough into 10 equal pieces, roll each gently into a ball, flatten lightly into a dish about 3/4 of an inch thick and place about 2-inches apart from one another on the prepared baking sheet. Place the biscuits in the freezer to chill until firm (about 10 minutes).

Remove the baking sheet from the freezer. Add the remaining 1/2 teaspoon garlic powder and remaining 1 tablespoon chopped parsley to the 2 tablespoons of melted butter, and mix to combine. Using a pastry brush, brush the tops and sides of the chilled biscuits with the garlic butter. Place the baking sheet in the center of the preheated oven and bake until firm to the touch, brown on the underside and lightly golden brown on top (about 20 minutes). Remove from the oven, and allow to cool for 5 minutes before transferring to a wire rack to cool completely.

My Recipe Box - Rosemary-Yogurt Bicuits

This is another Betty Crocker Bisquick recipe for biscuits.

Mix 1 cup Bisquick baking mix, 1/2 cup plain yogurt and 2 teaspoons rosemary leaves until a soft dough forms. Turn the dough onto a cloth-covered surface well dusted with baking mix . Roll the dough in baking mix to coat, shape into a ball. Knead dough 5 times; roll or pat 1/2 in thick. Cut with 1 3/4 inch round cutter dipped into baking mix. Bake on ungreased cookie sheet at 450 degrees for 8 to 10 minutes or until golden brown.

Recipes To Try

These are some recipes from a Canadian chef on the Food network Canada station. Ricardo is not one of my favourites to watch but caught an old episode today and was intrigued with a couple of his recipes.
Spinach polpetti

Beet cakes with mascarpone I love beets and think this might be a novel dessert to serve to guests.

Southern sausage cheese breakfast biscuits I love the idea that you can freeze these ahead of time for a brunch plus the fact that she used Bisquick.

Grilled maple chili salmon sounds like a great summertime meal.

Flank steak with bloody Mary tomato salad what's not to love about this dish, other than the olives (hate them!).

I'm always looking for new chicken recipes so I was excited when I found oven fried chicken tenders!

No bake Oreo cheesecake this just might get made this weekend!!

Tacos with homemade sauce I'm always trying to come up with a good mixture for tacos.

My Recipe Box - Red Lobster Cheese Biscuits


One of the best things at Red Lobster are the cheese biscuits. These are so easy to make.


These are so good I'm going to have to triple my batches and keep some frozen. Served this week with ham and cauliflower cheese.


Ingredients:


•2 cups buttermilk baking mix, Bisquick

•2/3 cup milk

•1/2 cup shredded sharp Cheddar cheese

•1/4 cup butter, melted

•1/4 tsp garlic powder

Preparation:

In mixing bowl, mix together baking mix, milk and cheese until a soft dough forms, then beat vigorously 30 seconds. Drop from spoon onto ungreased baking sheet and bake at 450° until golden brown, 9 to 10 minutes. Mix together butter and garlic powder. Brush over hot biscuits and serve hot. Makes 10 - 12.
