Recipes - Ale Braised Ribs

I made the ribs this week and they were really good. I served them with fries which soaked up the gravy and all was good.


INGREDIENTS:


3.5 pounds beef short ribs trimmed and separated into individual ribs
Salt and pepper to taste
Canola oil as needed
2 cups white onions, peeled and largely diced
2 tbsp sage
5 cloves garlic, peeled and sliced
2 tbsp tomato paste
2 cups bottle brown ale
2 cups beef stock


PREPARATION:

Heat oven to 350 degrees.
Season ribs with salt and pepper. Sear ribs in canola oil.

Remove ribs and saute onions, garlic until caramelized. Add tomato paste and caramelize. Deglaze pan with ale and beef stock and simmer until reduced by 1/2. Return beef ribs to pan and  simmer covered for 3hours.
Remove ribs and keep warm and covered.

Serve immediately.
